Chicken Posole Verde

This soup is so heartwarming and comforting, perfect for a cold night! Everyone will enjoy adding their favorite toppings.

You can use potato to make this Whole30 friendly, or hominy to keep it traditional.

You need:

  • 1.5 lb chicken thighs or breast

  • 1 jar tomatillo salsa

  • 1 cup chicken broth

  • 1 can diced green chiles

  • 1 green bell pepper, chopped

  • ½ tsp cumin

  • 2 cups diced potatoes or 1 can of hominy (drained and rinsed)

  • Topping options: limes, avocado, cilantro, shredded cabbage, sliced radishes

Step by step:

  1. Add chicken, salsa, broth, green chiles, bell pepper, and cumin to the crockpot.

  2. If you are using potatoes, cook on high for 2 hours and then add the potatoes. Cook for another 2 hours.

  3. If you are using hominy, cook on high for 3 hours and then add the hominy. Cook for another hour.

  4. When the chicken is falling apart, take it out and shred with two forks. Add it back to the crockpot and let cook for 15 more minutes. 

  5. When serving, add toppings of choice.
